Food Service Providers

The contracted food service provider, FSS Oklahoma, LLP, began serving the MMAC in June of 2022 and is owned and operated by Murod Mamatov, Elena Sistos, and Chef Oliver Palms.

TSF (TSF-215) and Formerly Einstein’s (HQ-001) - Temporarily Closed

Food Policy: The MMAC on-site food provider contract contains a provision providing for "exclusivity," similar to other commercial food contracts at comparable facilities. Exclusivity means the MMAC on-site food service provider is entitled to "right of first refusal" for all food-related events, other than employee-prepared "covered dish" or "potluck" type meals, birthday celebrations, small retirement parties and receptions that are not professionally catered.

When food-related activities are desirable to complement other planned MMAC events such as an employee appreciation luncheon/dinner, retirement parties, receptions, or group luncheons sponsored by any Special Emphasis Group or other employee association, the sponsoring organization MUST notify the MMAC Employee Services Program Manager (ESPM) in AMP-001 at 405-954-3841, who will facilitate discussions between the on-site food provider and the customer to arrange the meal or other food and beverages to be provided by the on-site food provider.

Outside catering is authorized if it has been determined that the on-site food service cannot meet the organization’s requests, desire for quality, and/or the costs are 10% more above those established by the local catering market. In making the determination as to excessive prices, the sponsoring organization MUST obtain written quotes from outside caterers and submit the quotes to the MMAC ESPM at least 10 business days prior to the date of the scheduled event. The MMAC ESPM will make the final decision with regard to reasonable pricing.
