As the Mike Monroney Aeronautical Center strives to create a vibrant and inclusive community, the recently renewed contract with the on-site food provider, FSS Oklahoma has certain exclusivity provisions in their contract.

Blue Sky Café nestled within the Aviation Records Building (ARB Building 22), is the location for the Aeronautical Center’s on-site food service provider. This provider has “right of first refusal” for all food-related events, ensuring a seamless and consistent culinary experience for MMAC employees.

Recognizing the evolving preferences of its diverse community, the Center periodically hosts food trucks on the grounds. Food trucks can be used on the premises but with certain provisions: There is a cap of four times per month and a week’s notice to the on-site food provider is required.

In addition to the main food service, MMAC boasts two snack bar locations in the Air Traffic Building (Building 3) and the Thomas P. Stafford Building (TPS Building 27). Operated by the Oklahoma Department of Rehabilitation Services, these snack bars are an additional treat for the Center’s busy students, employees and guests.

To ensure the success of the Mike Monroney Aeronautical Center’s food service program, a comprehensive policy has been crafted, focusing on health, safety, and revenue considerations. The policy outlines the principles governing employee-provided food and beverages and establishes protocols for other food-related events.

The Center embraces the personal touch with a conservative nod to “brown bag” lunches, frozen dinners, and employee-prepared “cover dish” or “potluck” gatherings.

For larger events, MMAC’s Employee Services Program Manager (ESPM) acts as the bridge between the on-site food provider and the customer. A quarterly general price list streamlines the process, offering organizations a wide variety of menu options to choose from. Flexibility is key at the Aeronautical Center, and outside catering is an authorized alternative when the on-site provider’s offerings cannot meet the request. However, the decision-making process is meticulous, involving written quotes from external caterers and the ESPM’s final approval to ensure pricing remains within reasonable bounds.
